Prep time: 25 minutes
Cooking time: 3 minutes
Serves: 4 people
Ingredients:
2 Cups Gluten Free Self Raising Flour
2 Free Range Eggs
1 Teaspoon Vanilla Essence
1 Cup Milk
1 Soft Banana, mashed
Berries or extra Banana and Maple Syrup for topping
Directions:
Combine Banana, Flour, Eggs and Vanilla Essence in a bowl.
Add milk slowly to bowl and mix with an electric beater until you have a consistency that you like
Depending on how fluffy you want your pancakes, you can add a little more milk.
Allow batter to rest for approx 15 mins.
Fry on a medium eat until bubbling.
Flip and cook on other side.
Serve with fresh berries and a drizzle of maple syrup.
