Gluten Free Chicken and Sweetcorn Chowder Recipe

You will need
800 g / 1.7 pounds chicken breast
1 onion, diced
30 g butter (2 tablespoons)
2x 440 g /16 oz cans creamed corn
440 g can corn
4 cups / 1 litre gluten free chicken stock
60 g / 2 oz packaged cream cheese - use Goats Cheese or lactose free cream cheese if intolerant to cow milk
1 tablespoon cornflour/cornstarch (ensure gluten free)
1 tablespoon water
1 green shallot, chopped
cracked pepper
To Make
Boil chicken in a large pan of water for approx 10 mins until cooked and remove from pan
Using 2 forks, shred chicken into bite-size pieces.
In a large saucepan, melt butter and cook onion over medium heat until soft.
Add creamed corn, chicken stock, and chicken. Bring to the boil, reduce heat and simmer, covered, for 10 minutes.
Add tin of corn and stir through.
In a small bowl, blend cream cheese with a little of the hot soup to soften, then stir the mixture into the saucepan.
Mix cornflour and water together in a small bowl until combined. Add to the soup and stir continuously over medium heat until it returns to a boil and thickens slightly.
Stir in chopped shallot and season with cracked pepper just before serving.
