Gluten Free Tabbouleh (Tabouli) Recipe

If you miss having tabbouleh, this recipe is a perfect gluten free alternative.

Packed full of nutrition and flavour, it is delicious on a Yiros or even as a salad with a BBQ.

Enjoy!


You will need


1.5 cups of tri-colour Quinoa

3 cups of Water

1 tsp Chia Seeds

1 tsp Gluten Free Vegetable Stock

4 Ripe Tomatoes (diced)

1 Small Red Onion (finely diced)

Squeeze of Lemon Juice

Half bunch parsley leaves

Half bunch of Kale Leaves

Olive Oil

Salt & Pepper

To Make


Rinse Quinoa

Place Quinoa, Chia Seeds, Water and Vegetable Stock into a saucepan and cook.

*You will know the Quinoa is cooked once it has sprouted what looks like a small tail.

Set aside to cool.

Chop Kale and blanch in boiling water, then set aside to cool

Chop Parsley and set aside

Chop Tomatoes and Onion and place in large bowl, then mix together with Olive Oil, Lemon Juice and Salt & Pepper to taste.

Combine with cooled Quinoa, blanched kale & parsley.
