I love Baked Beans. I have fond memories from my childhood of toasted sandwiches with baked beans oozing out of them. They feel like such a comfort food for me.
My husband started making his own recipe for Baked Beans and his taken my love for them to a whole new level.
He makes a big batch and we enjoy them for breakfast and then I have leftovers for a few days. They are so yummy and filling.
Here is the recipe. Enjoy.
You Will Need
1 Brown Onion, diced
2 Cloves Garlic, crushed
2 Chorizo, halved lengthwise then sliced
4 Bacon Rashers, cut into 1cm square pieces
2 400g Tins Cannellini Beans
2 400g Tins Diced Tomatoes
1 tsp Ground Oregano
1 tsp Ground Coriander
1 1/2 tsp Ground Cumin
1 tsp Sugar
1 Tbsp Olive Oil
Heat the oil in a saucepan
Cook the onion and garlic
Add the chorizo and bacon and cook
Add in the beans and tomatoes then the sugar and spices
Stir and heat through
Delicious served on toast with some poached eggs.
