I just love beetroot so much. I have it on salad sandwiches and in salads. I love beetroot relish with cold meat or stirred through a huge bowl of salad. It is just so tasty. But. It's quite pricey and I seem to go through a bit too much of it.
So when I recently found plastic free bunches of beetroot on special for just $2 a bunch, I grabbed 2 bunches with the plan to make my own relish.
My sister and I spent a beautiful afternoon making relish together and coming up with the right taste. It was the perfect opportunity for a catch up and creating something delicious together.
I'd love to know if you make this relish and what you think of it.
We tripled the mixture and it made 7 jarfuls.
You will need
500g Beetroot peeled and diced into small cubes
1Tbs Olive Oil
1 Onion diced
3/4 cup Brown Sugar
3/4 cup Water
4 Tbs Apple Cider Vinegar
1/4 tsp All Spice
1/4 tsp Coriander Ground
1/4 tsp Cumin Ground
1/2 tsp Coriander Seeds
1/2 tsp Cumin Seeds
1 Garlic Clove crushed
Salt to taste
To make
Saute onion in olive oil in a large pot until softened
Add all remaining ingredients, cook on a medium heat until simmering
Turn heat to low heat and cook until beetroot is softened to your liking
Place in sterilised jars whilst relish is still hot.
