I have made so many different banana bread recipes and always come back to this one. It is so easy to make and is delicious with a spread of Nuttelex and a drizzle of maple syrup.
When I stock up on a heap of really ripe bananas, I have to make banana bread, every time.

You Will Need
½ cup Honey
½ cup Nuttelex or Coconut Butter
2 medium Bananas
⅓ cup Coconut Milk
1 ½ tsp Vanilla Extract
2 cups Gluten Free Self Raising Flour
1 tsp Baking Soda
½ tsp Salt
¼ cup Chia Seeds
Preheat oven to 180°C.
In a medium sized mixing bowl, mash the Bananas with a fork until all clumps are gone.
Add Nuttelex or Coconut Butter and Eggs and mix well.
Add remaining ingredients and mix.
Pour into a pre-greased loaf pan.
Bake for 50 – 55 minutes
Test with a skewer and remove from oven. Enjoy!
